2023 Sal

Made from an 85 year old vineyard in Vine Vale. Deep, sand based soils over orange clay.

Direct, whole bunch pressed to stainless steel. Left to settle for two days, racked to another tank for fermentation before being put to old 500lt French puncheons for maturation.

Aged in barrel for 18 months.

Clean citrus / smoke and lanolin / salt-brushed stones.

Zero adds, fining or filtration.
